Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup cream soda
Add-ins
  • 1 cup butterscotch chips
  • 1/2 cup chopped pecans optional

Method
 

Prepare the Oven
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix Dry Ingredients
  1. In a mixing bowl, whisk together the flour, baking soda, and salt. Set aside.
Cream Butter and Sugars
  1. In a large bowl, using an electric mixer, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add Eggs and Vanilla
  1. Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract and cream soda.
Combine Mixtures
  1. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
Fold in Add-ins
  1. Gently fold in the butterscotch chips and chopped pecans (if using).
Bake Cookies
  1. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are lightly golden.
Cool and Serve
  1. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
