Ingredients
  

Base
  • 2 cups Cooked Rice White or brown rice
Protein
  • 1 pound Ground Beef Or substitute with chicken or tofu
  • 1 can Black Beans Rinsed and drained
Vegetables
  • 1 cup Corn Fresh or frozen
  • 1 cup Diced Tomatoes Fresh or canned
  • 1 cup Chopped Lettuce Romaine or iceberg
  • 1 cup Diced Bell Peppers Any color
Toppings
  • 1 cup Shredded Cheese Cheddar or Mexican blend
  • 1 cup Sour Cream Or Greek yogurt
  • 1 cup Guacamole Optional
  • 1 cup Salsa Optional
Seasoning
  • 2 tablespoons Taco Seasoning Store-bought or homemade

Method
 

Cook the Protein
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add taco seasoning and black beans to the skillet. Stir and cook for an additional 5 minutes.
Prepare the Rice
  1. While the protein is cooking, prepare the rice according to package instructions.
Assemble the Bowl
  1. In serving bowls, layer cooked rice, the protein mixture, corn, diced tomatoes, chopped lettuce, and bell peppers.
  2. Top with shredded cheese, sour cream, guacamole, and salsa as desired.
