Ingredients
  

Buffalo Chicken Filling
  • 2 cups cooked chicken shredded
  • 1/2 cup buffalo sauce adjust to taste
  • 1/4 cup ranch dressing for spreading
  • 1 cup cheddar cheese shredded
Panini Assembly
  • 8 slices ciabatta bread or any preferred bread
  • 2 tablespoons butter softened for spreading

Method
 

Prepare the Buffalo Chicken
  1. In a mixing bowl, combine the shredded chicken with buffalo sauce until well coated.
  2. Set aside to let the flavors meld for a few minutes.
Assemble the Panini
  1. Spread ranch dressing on one side of each slice of ciabatta bread.
  2. On the unspread side, layer the buffalo chicken mixture and top with shredded cheddar cheese.
  3. Top with another slice of bread, ranch side down.
Cook the Panini
  1. Preheat the panini press according to manufacturer's instructions.
  2. Spread softened butter on the outer sides of the bread.
  3. Place the sandwiches in the panini press and cook for 5-7 minutes, or until golden brown and the cheese is melted.
Serve
  1. Remove the panini from the press, slice in half, and serve hot.

Notes
