Ingredients
  

  • 15 pieces mini phyllo shells
  • 2 tablespoons blackberry jam
  • 2 tablespoons honey
  • 3 ounces brie cheese, rind removed cut into 1/2” cubes
  • 15 pieces fresh blackberries rinsed and dried
  • 2-3 sprigs fresh thyme leaves for garnish

Method
 

  1. Preheat your oven to 325°F (163°C).
  2. Arrange the mini phyllo shells on a baking sheet evenly spaced out.
  3. Place a small dab (about 1/2 teaspoon) of blackberry jam and 1/2 teaspoon honey inside each phyllo shell. Top each with a 1/2-inch cube of brie cheese.
  4. Bake the assembled cups in the preheated oven for 6-8 minutes until the brie has melted and the phyllo shells are very lightly browned and crisp.
  5. Remove the baking sheet from the oven and top each cup with a fresh blackberry and a few fresh thyme leaves.
  6. Drizzle additional honey over the top if desired and transfer the cups onto a wire rack to maintain crispness. Serve immediately while warm.
