Method
Cook Quinoa
- In a pot, combine quinoa and water. Bring to a boil, then reduce heat to low and cover. Cook for 15 minutes or until water is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
Grill Chicken
- Preheat the grill to medium-high heat. Marinate chicken breasts in BBQ sauce for at least 10 minutes.
- Grill chicken for 6-7 minutes on each side or until fully cooked. Let it rest for a few minutes before slicing.
Assemble Bowls
- In a bowl, layer quinoa, sliced chicken, cherry tomatoes, cucumber, corn, and black beans.
- Drizzle ranch dressing over the top and serve immediately.
