Ingredients
  

Chicken and Quinoa
  • 1 lb boneless, skinless chicken breasts grilled and sliced
  • 1 cup quinoa rinsed
  • 2 cups water for cooking quinoa
  • 1 cup BBQ sauce for marinating chicken
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup corn cooked
  • 1 cup black beans rinsed and drained
Dressing
  • 1/2 cup ranch dressing for drizzling

Method
 

Cook Quinoa
  1. In a pot, combine quinoa and water. Bring to a boil, then reduce heat to low and cover. Cook for 15 minutes or until water is absorbed.
  2. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
Grill Chicken
  1. Preheat the grill to medium-high heat. Marinate chicken breasts in BBQ sauce for at least 10 minutes.
  2. Grill chicken for 6-7 minutes on each side or until fully cooked. Let it rest for a few minutes before slicing.
Assemble Bowls
  1. In a bowl, layer quinoa, sliced chicken, cherry tomatoes, cucumber, corn, and black beans.
  2. Drizzle ranch dressing over the top and serve immediately.

Notes
