  • 2 cups grilled chicken breast sliced
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup corn cooked
  • 1 cup black beans rinsed and drained
  • 1 avocado sliced
Cilantro Ranch Dressing
  • 1 cup Greek yogurt
  • 1/2 cup mayonnaise
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat. Season the chicken breasts with BBQ sauce and grill for about 6-7 minutes on each side until fully cooked.
  2. Remove the chicken from the grill and let it rest for a few minutes before slicing.
Make the Cilantro Ranch Dressing
  1. In a mixing bowl, combine Greek yogurt, mayonnaise, chopped cilantro, lime juice, garlic powder, onion powder, salt, and black pepper.
  2. Whisk until smooth and creamy. Adjust seasoning if needed.
Assemble the Salad
  1. In a large bowl, combine chopped romaine lettuce, cherry tomatoes, cucumber, corn, black beans, and sliced avocado.
  2. Add the sliced grilled chicken on top and drizzle with cilantro ranch dressing. Toss gently to combine.
