Ingredients
  

Chicken and Rice
  • 1 pound boneless chicken breasts cut into bite-sized pieces
  • 2 cups cooked jasmine rice or rice of choice
  • 1 tablespoon olive oil for cooking
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Vegetables
  • 1 cup shredded carrots
  • 1 cup cucumber sliced
  • 1 cup red cabbage shredded
Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
  • 1 teaspoon lime juice

Method
 

Cook the Chicken
  1. Heat olive oil in a large skillet over medium heat. Season the chicken pieces with salt and pepper.
  2. Add the chicken to the skillet and cook for about 6-8 minutes, or until fully cooked and golden brown.
Prepare the Bang Bang Sauce
  1. In a mixing bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth.
Assemble the Bowl
  1. In serving bowls, layer cooked rice, followed by the cooked chicken, shredded carrots, cucumber, and red cabbage.
  2. Drizzle the bang bang sauce over the top and serve immediately.
