Prepare the Filling
- In a mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Mix until well blended.
- Stuff each jalapeño half with the cheese mixture.
Wrap with Bacon
- Take a piece of chicken and wrap it around the stuffed jalapeño. Secure with a toothpick.
- Wrap a slice of bacon around the chicken and jalapeño, securing it with another toothpick if necessary.
Bake
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place the bacon-wrapped chicken bites on the prepared baking sheet.
- Bake for 25 minutes or until the bacon is crispy and the chicken is cooked through.
