  • 8 cups romaine lettuce chopped
  • 1 cup kale stems removed and chopped
  • 1/2 cup parmesan cheese shaved
Roasted Delicata Squash Croutons
  • 1 medium delicata squash sliced into half-moons
  • 2 tablespoons olive oil for roasting
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Caesar Dressing
  • 1/4 cup Greek yogurt for creaminess
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup olive oil for dressing

Method
 

Prepare the Roasted Delicata Squash Croutons
  1. Preheat the oven to 400°F (200°C).
  2. Toss the delicata squash slices with olive oil, salt, and pepper.
  3. Spread the squash on a baking sheet in a single layer.
  4. Roast for 25-30 minutes, flipping halfway through, until tender and golden.
Make the Caesar Dressing
  1. In a mixing bowl, whisk together Greek yogurt, lemon juice, Dijon mustard, minced garlic, and Worcestershire sauce.
  2. Slowly drizzle in olive oil while whisking until the dressing is smooth.
  3. Season with salt and pepper to taste.
Assemble the Salad
  1. In a large salad bowl, combine the chopped romaine lettuce and kale.
  2. Drizzle the Caesar dressing over the greens and toss to coat evenly.
  3. Top the salad with roasted delicata squash croutons and shaved parmesan cheese.
