Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
Wet Ingredients
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup apple peeled and finely chopped
Topping
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon

Method
 

Prepare the Oven and Baking Sheet
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix Dry Ingredients
  1. In a mixing bowl, whisk together the flour, baking soda, cream of tartar, salt, and cinnamon.
Cream Butter and Sugars
  1. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add Egg and Vanilla
  1. Beat in the egg and vanilla extract until well combined.
Combine Mixtures
  1. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chopped apple.
Prepare Topping
  1. In a small bowl, mix together the granulated sugar and cinnamon for the topping.
Form Cookies
  1. Using a cookie scoop, drop dough onto the prepared baking sheet. Roll each ball in the cinnamon-sugar mixture.
Bake
  1. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Cool and Serve
  1. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
