Ingredients
  

Cookie Base
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
Apple Filling
  • 2 cups apples peeled and diced
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
Crisp Topping
  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1/2 teaspoon cinnamon

Method
 

Prepare the Cookie Base
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Make the Apple Filling
  1. In a separate bowl, combine the diced apples, granulated sugar, cinnamon, and lemon juice. Toss until the apples are well coated.
Prepare the Crisp Topping
  1. In a bowl, mix together the oats, flour, brown sugar, melted butter, and cinnamon until crumbly.
Assemble and Bake
  1. Drop spoonfuls of the cookie base onto the prepared baking sheet, leaving space between each cookie.
  2. Top each cookie with a spoonful of the apple filling, then sprinkle the crisp topping over the apples.
  3. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  4. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
