Method
Prepare the Cookie Base
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Make the Apple Filling
- In a separate bowl, combine the diced apples, granulated sugar, cinnamon, and lemon juice. Toss until the apples are well coated.
Prepare the Crisp Topping
- In a bowl, mix together the oats, flour, brown sugar, melted butter, and cinnamon until crumbly.
Assemble and Bake
- Drop spoonfuls of the cookie base onto the prepared baking sheet, leaving space between each cookie.
- Top each cookie with a spoonful of the apple filling, then sprinkle the crisp topping over the apples.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
