Ingredients
  

Bread and Cheese
  • 8 slices sourdough bread
  • 8 slices cheddar cheese or your favorite cheese
Filling
  • 1 cup fresh cranberries or dried cranberries
  • 1 large apple sliced thinly
  • 2 tablespoons brown sugar optional, for sweetness
  • 1 teaspoon cinnamon optional, for flavor
Butter
  • 4 tablespoons butter softened

Method
 

Prepare the Filling
  1. In a bowl, combine the cranberries, sliced apple, brown sugar, and cinnamon. Mix well and set aside.
  2. If using fresh cranberries, you may want to cook them briefly in a saucepan with a little water until they pop.
Assemble the Sandwiches
  1. Spread butter on one side of each slice of bread.
  2. On the unbuttered side of four slices, layer cheddar cheese, the cranberry-apple mixture, and another slice of cheddar cheese.
  3. Top with the remaining slices of bread, buttered side up.
Grill the Sandwiches
  1. Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for about 3-4 minutes until golden brown.
  2. Flip the sandwiches carefully and grill the other side for another 3-4 minutes until the cheese is melted and the bread is golden brown.
Serve
  1. Remove the sandwiches from the skillet, let them cool for a minute, then slice in half and serve warm.
