Prepare the Filling
- In a bowl, combine the cranberries, sliced apple, brown sugar, and cinnamon. Mix well and set aside.
- If using fresh cranberries, you may want to cook them briefly in a saucepan with a little water until they pop.
Assemble the Sandwiches
- Spread butter on one side of each slice of bread.
- On the unbuttered side of four slices, layer cheddar cheese, the cranberry-apple mixture, and another slice of cheddar cheese.
- Top with the remaining slices of bread, buttered side up.
Grill the Sandwiches
- Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for about 3-4 minutes until golden brown.
- Flip the sandwiches carefully and grill the other side for another 3-4 minutes until the cheese is melted and the bread is golden brown.
Serve
- Remove the sandwiches from the skillet, let them cool for a minute, then slice in half and serve warm.
