  • 2 1/2 cups chopped onion, tomatoes, and peppers (or salsa)
  • 1/2 cup tomato sauce
  • 1 cup grated zucchini
  • 2 cups cooked quinoa
  • 1 cup shredded cheddar cheese or Mexican cheese blend
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 2 teaspoons cumin

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook quinoa according to package instructions.
  3. In a large skillet over medium heat, brown the ground turkey until cooked through (about 5-7 minutes).
  4. Add onions, tomatoes, peppers, and garlic; sauté until tender (about 5 minutes).
  5. Stir in cooked quinoa, tomato sauce, zucchini, chili powder, cumin, and half of the cheese.
  6. Transfer mixture to a greased baking dish and top with remaining cheese.
  7. Bake for about 20 minutes or until bubbly and golden.
