  • 10 mini pumpkins
  • 1 lb ground beef
  • 1 can (15 oz) pumpkin puree
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 6 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp pumpkin pie spice
  • 1/2 tbsp fresh thyme
  • 1/2 tbsp fresh oregano
  • 1/2 tbsp fresh sage, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse mini pumpkins and cut off tops. Scoop out seeds.
  3. Sauté onion and garlic in olive oil until fragrant (3-5 minutes).
  4. In a bowl, combine ground beef, pumpkin puree, sautéed onion & garlic, spices, and herbs.
  5. Grease a baking dish with olive oil. Fill each pumpkin with stuffing and replace tops.
  6. Bake for 30-35 minutes until tender.
  7. Serve warm.
