  • 1 cup fresh spinach, chopped
  • 1/2 cup canned artichoke hearts, chopped
  • 1/3 cup cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 slices of bread (sourdough or your choice)
  • 2 tablespoons butter, softened

Instructions

  1. Sauté the chopped spinach in a nonstick skillet over medium heat for 1–2 minutes until wilted.
  2. In a bowl, mix sautéed spinach with artichokes, cream cheese, mayonnaise, Parmesan, mozzarella, garlic powder, salt, and pepper.
  3. Butter one side of each bread slice and assemble by spreading the filling on two slices (butter side down) and topping with the remaining slices (butter side up).
  4. Grill sandwiches in a skillet over medium heat for 3–4 minutes per side until golden brown and crispy.
  5. Serve warm and enjoy!
