  • 4 tbsp butter
  • ¼ cup all-purpose flour
  • 3 cups whole milk
  • 2 cups shredded smoked Gouda cheese
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: ½ cup breadcrumbs, pinch of paprika or cayenne pepper

Instructions

  1. Cook the elbow macaroni in salted boiling water until al dente. Drain and set aside.
  2. In a medium saucepan over medium heat, melt the butter. Whisk in flour for about a minute to create a roux.
  3. Gradually add milk while whisking until smooth and simmer until thickened.
  4. Stir in smoked Gouda and cheddar until fully melted.
  5. Combine the pasta with the cheese sauce, ensuring all pieces are well coated.
  6. For a crispy topping, transfer to a baking dish, sprinkle breadcrumbs and spices, then bake at 350°F (175°C) for about 20 minutes until golden brown.
