  • 250 g all-purpose flour
  • 100 g butter (or lard)
  • 100 ml boiling water
  • 400 g ground lamb (or beef mix)
  • 1 tsp finely chopped onion
  • 1 tsp white pepper
  • 0.5 tsp black pepper
  • 0.5 tsp ground mace
  • 0.25 tsp ground nutmeg
  • 1 beaten egg (for brushing)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a saucepan, heat the butter (or lard) with boiling water until melted. Combine this with flour and half of the salt in a bowl; stir until cool enough to knead into a smooth dough.
  3. In another bowl, mix ground lamb (or beef), onion, remaining salt, and spices until well combined.
  4. Roll out the dough to about 1/8-inch thick; cut circles for pie bases and tops.
  5. Fill pastry cases with the meat mixture and seal with tops; brush with beaten egg.
  6. Bake for 30–35 minutes or until golden brown.
