  • 89 medium starchy potatoes (1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup heavy cream (250 ml)
  • 1/4 cup whole milk (60 ml)
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 2 cups shredded Gruyère or mozzarella cheese
  • 1/2 cup grated parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the garlic: Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for about 30 minutes.
  3. Grease a 9×13-inch baking dish with butter.
  4. Slice the potatoes uniformly into thin rounds.
  5. Layer the sliced potatoes upright in the baking dish.
  6. In a saucepan over medium heat, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper until melted but not boiling.
  7. Squeeze out roasted garlic cloves and mash them into a paste; stir into the creamy mixture.
  8. Pour the mixture over the layered potatoes and cover with foil.
  9. Bake for 40 minutes; then remove foil and sprinkle remaining cheeses on top.
  10. Bake uncovered for another 30 minutes until golden brown and bubbly.
  11. Allow to cool slightly before serving; garnish with fresh chives.
