  • 5 tbsp unsalted butter (melted)
  • 2 large eggs
  • 1 egg yolk
  • 1/3 cup canola or vegetable oil
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch-process cocoa powder
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper, spread halved cherries, and sprinkle with sugar. Roast for about 10 minutes.
  2. Reduce the oven temperature to 325°F. Prepare an 8×8 pan with non-stick spray and parchment paper.
  3. Sift together flour, cocoa powder, cornstarch, and salt in a mixing bowl.
  4. Beat together sugar, eggs, and egg yolk until light and fluffy. Mix in melted butter, oil, and vanilla.
  5. Gently fold the dry ingredients into the wet mixture along with half of the roasted cherries and chocolate chips.
  6. Pour batter into the prepared pan and smooth it out evenly. Bake for 40-50 minutes until edges are set but center is slightly underbaked.
  7. Let cool before lifting out with parchment paper; top with remaining roasted cherries before slicing.
