  • 8 ounces ricotta cheese
  • 1 crusty bread loaf
  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)
  • 1 bunch fresh basil (divided)
  • Salt and black pepper
  • Balsamic glaze

Instructions

  1. Preheat the oven to 400°F (200°C). In a baking dish, combine cherry tomatoes with 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper. Roast for about 20 minutes until tomatoes burst slightly.
  2. In a blender or food processor, blend ricotta cheese, remaining garlic, 1 tablespoon olive oil, half a cup of basil leaves, salt, and pepper until smooth. Chill.
  3. Slice the crusty bread into 12 half-inch thick slices. Brush both sides with remaining olive oil mixed with the last minced garlic clove. Toast in the oven for 10-12 minutes until golden brown.
  4. Assemble by spreading ricotta on each toast, topping it with roasted tomatoes and fresh basil. Drizzle balsamic glaze over the top before serving.
