  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup orzo pasta
  • 2 cups low sodium chicken broth
  • ½ cup pesto
  • 1 pint cherry tomatoes, halved
  • ½ medium red onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • ¼ cup grated Parmesan cheese, plus more for serving
  • ¼ cup fresh basil, chopped (optional)
  • Salt and black pepper to taste
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Prepare all ingredients by cutting chicken into bite-sized pieces, halving cherry tomatoes, and slicing red onion.
  2. In a large oven-safe skillet, heat olive oil over medium-high heat. Sauté sliced red onion for 3-4 minutes until softened. Add minced garlic and cook for an additional minute.
  3. Season chicken pieces with salt and black pepper; add them to the skillet and brown on all sides for about 5-7 minutes.
  4. Pour in chicken broth and stir in orzo and halved cherry tomatoes. Bring to boil then reduce heat to simmer, covered, for 15-20 minutes until orzo is tender.
  5. Remove from heat; stir in pesto and lemon juice followed by grated Parmesan cheese.
  6. Serve immediately garnished with fresh basil if desired.
