  • 8 ounces sliced mushrooms (cremini, shiitake, or button)
  • 2 tablespoons vegetable oil (or sesame oil)
  • 3 cloves garlic (minced)
  • 1 teaspoon fresh ginger (grated)
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 bell pepper (sliced)
  • 1/2 cup snap peas
  • 1/2 cup broccoli florets
  • 1/2 teaspoon red pepper flakes (for heat)
  • Sesame seeds and chopped green onions for garnish

Instructions

  1. Press the tofu to remove moisture, then cut it into cubes.
  2. Heat vegetable oil in a skillet over medium-high heat. Add cubed tofu and sear for 3-4 minutes until golden brown; flip to cook all sides.
  3. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
  4. Mix in sliced mushrooms and vegetables; stir-fry for about 5 minutes until tender yet vibrant.
  5. Combine soy sauce, rice vinegar, maple syrup/honey, and cornstarch mixture in a bowl; pour over the stir-fry and cook for another minute until thickened.
  6. Serve hot with sesame seeds and chopped green onions as garnish.
