  • 8 ounces mozzarella cheese (cut into cubes)
  • 1/4 cup baking soda
  • 1/4 cup unsalted butter (melted)
  • Coarse sea salt (for sprinkling)

Instructions

  1. Activate the yeast by combining warm water, yeast, and sugar in a mixing bowl; let sit for 5 minutes until foamy.
  2. In another bowl, whisk flour and salt together before gradually adding to the yeast mixture.
  3. Knead the dough until smooth—about 5 minutes using a stand mixer or 8 minutes by hand.
  4. Mix in chopped rosemary and Parmesan cheese; form into a ball and let rise for about an hour until doubled.
  5. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  6. Punch down the dough, divide into 8 pieces, place mozzarella cubes in each piece, seal tightly, and shape into pretzels.
  7. Boil prepared pretzels in water mixed with baking soda for about 30 seconds each before draining.
  8. Brush with melted butter, sprinkle with coarse sea salt, and bake for 12-15 minutes until golden brown.
