  • 2½ teaspoons pure vanilla extract

  • ⅔ cup sour cream
  • ¾ cup milk (preferably whole or 2%, at room temperature)
  • 3 cups fresh strawberries (sliced or diced, divided)
  • 2 tablespoons strawberry jam
  • 8 ounces cream cheese (softened to cool room temperature)
  • 1 cup powdered sugar
  • ¾ teaspoon vanilla extract
  • 2¼ cups heavy whipping cream (very cold, straight from the fridge)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, whisk together flour, baking powder, and salt.
  2. In another bowl, beat sugar and oil until combined. Add eggs one at a time, mixing well.
  3. Mix in pure vanilla extract and optional almond extract, then add sour cream and milk until smooth. Gradually fold in dry ingredients.
  4. Divide batter into prepared pans and bake for about 20 minutes until golden brown.
  5. While cooling, mix sliced strawberries with strawberry jam and let sit for 10-15 minutes.
  6. For the frosting, beat softened cream cheese with powdered sugar; gradually add heavy cream until soft peaks form.
  7. Assemble by layering cake with macerated strawberries and frosting.
