  • 1 cup long grain white rice (such as basmati or jasmine)
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced
  • 2 ½ cups low-sodium chicken broth (or vegetable broth)
  • Zest of 1 lemon
  • Juice of 1 lemon (about 23 tablespoons)
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Optional: 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. In a medium saucepan, heat olive oil over medium heat. Sauté the diced onion for about 2–3 minutes until softened; add minced garlic and cook for another 30 seconds until fragrant.
  2. Add the rice to the pan, stirring well to coat in the oil. Toast for about one minute before pouring in the broth, lemon juice, lemon zest, oregano, salt, and pepper.
  3. Bring to a gentle boil, then reduce heat to low and cover tightly. Simmer undisturbed for about 18–20 minutes.
  4. Remove from heat and let it sit covered for an additional five minutes before fluffing with a fork.
