  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 egg yolk
  • 100 ml warm water
  • 100 g sour cream
  • 100 g crème fraîche
  • Salt and pepper to taste
  • Nutmeg to taste
  • 250 g Hokkaido pumpkin
  • 1 red onion
  • 100 g feta cheese
  • 10 walnuts
  • 1 tbsp thyme

Instructions

  1. Prepare the dough by combining flour, olive oil, salt, egg yolk, and warm water in a bowl. Knead until smooth and let rest for 30 minutes.
  2. Preheat your oven to 220 degrees Celsius (428 Fahrenheit).
  3. Mix sour cream and crème fraîche; season with salt, pepper, and nutmeg.
  4. Slice the pumpkin into thin strips; chop the onion, crumble the feta, and chop walnuts.
  5. Roll out the dough into rectangles; spread the cream mixture on top and layer with pumpkin, onion, feta, and walnuts.
  6. Bake for 12-15 minutes until golden brown. Garnish with fresh thyme before serving.
