Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter (for filling)
  • 1/4 cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 12 tablespoons milk (as needed for texture)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients until a dough forms.
  5. Roll dough into 1-inch balls, shape into ovals, and press with a fork to create a crosshatch pattern.
  6. Bake for 8–10 minutes until lightly golden; let cool completely on the baking sheet.
  7. For the filling, beat together peanut butter and softened butter until smooth, then gradually add powdered sugar and vanilla until creamy. Adjust texture with milk if needed.
  8. Spread or pipe filling onto one cookie and top with another cookie.
