  • 4 tablespoons unsalted butter or 3 tablespoons olive oil + 1 tablespoon butter
  • 1 large yellow onion, finely chopped
  • 56 cloves garlic, minced
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk
  • 1/2 cup heavy cream (optional)
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Pinch of cayenne pepper or smoked paprika (optional)

Instructions

  1. Peel and cube the potatoes; rinse under cold water and set aside.
  2. In a large pot over medium heat, melt butter or olive oil. Sauté onions until translucent (5-7 minutes). Add minced garlic and cook for another minute.
  3. Stir in flour to create a roux; cook for 1-2 minutes.
  4. Gradually whisk in broth while scraping the pot's bottom.
  5. Add cubed potatoes, bring to a simmer, cover, and cook for 15-20 minutes until tender.
  6. Blend half the soup until smooth and return it to the pot.
  7. Reduce heat; stir in milk and cream (if using) along with fresh herbs.
  8. Slowly add shredded cheese off the heat, stirring until melted.
  9. Season with salt and pepper; serve hot with optional garnishes like croutons or extra cheese.
