  • 4 tablespoons light mayo
  • 2 teaspoons sriracha
  • 640g cooked jasmine or sushi rice
  • 200g fresh pineapple, diced
  • 1 cup cooked edamame beans
  • 2 baby cucumbers, sliced
  • 140g avocado, diced
  • 2 teaspoons grated garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon onion powder
  • 3 tablespoons soy sauce
  • 3 tablespoons maple syrup
  • 1 tablespoon apple vinegar
  • 1 tablespoon tomato paste
  • 100ml pineapple juice
  • 2 teaspoons sriracha
  • 2 teaspoons sesame oil
  • 1 small red onion, thinly sliced
  • 1 carrot, julienned
  • 3 spring onions, sliced (green part only)
  • 1 teaspoon toasted sesame seeds

Instructions

  1. Prepare the spicy mayo by mixing light mayo and sriracha in a small bowl. Adjust with water for drizzling consistency.
  2. Whisk together soy sauce, maple syrup, apple vinegar, pineapple juice, tomato paste, sesame oil, and sriracha in another bowl.
  3. In a large frying pan over medium-high heat, cook the diced chicken with garlic, ginger, and onion powder until golden brown.
