  • 2 cod fillets (about 6 oz each)
  • 2 cups cherry tomatoes
  • 1 tbsp olive oil (for cod)
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp olive oil (for tomatoes)
  • 1 tsp balsamic vinegar
  • 1 clove garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1/2 cup heavy cream
  • 1/4 cup Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh dill, chopped
  • 1 tsp lemon zest
  • 1 tbsp butter

Instructions

  1. Preheat your oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, pepper, balsamic vinegar, and minced garlic. Roast for about 20 minutes until blistered.
  2. While the tomatoes roast, pat the cod fillets dry. Rub them with olive oil and season with smoked paprika, garlic powder, onion powder, salt, black pepper, and lemon juice.
  3. Heat the grill or grill pan to medium-high heat. Grill the cod for 3-4 minutes on each side until golden brown and flaky.
  4. In a small saucepan over low heat, melt butter. Stir in heavy cream, Greek yogurt, Dijon mustard, fresh dill, lemon zest, salt, and black pepper; simmer for 2-3 minutes.
  5. Serve the grilled cod over roasted tomatoes and drizzle with creamy dill sauce.
