  • 8 oz dry macaroni noodles
  • ½ cup finely diced sweet gherkins
  • ¾ cup finely diced red bell pepper
  • ⅓ cup thinly sliced celery
  • ⅓ cup finely diced red onion
  • ¾ cup mayonnaise
  • ¼ cup sour cream
  • 2 Tbsp sweet pickle juice
  • 1 Tbsp red apple vinegar
  • 1 Tbsp sugar
  • 2 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ⅛ tsp garlic powder
  • ⅛ tsp crushed red pepper

Instructions

  1. Cook macaroni noodles in salted water until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine cooled macaroni with gherkins, bell pepper, celery, and red onion.
  3. In another bowl, whisk together mayonnaise, sour cream, pickle juice, vinegar, sugar, Dijon mustard, salt, black pepper, garlic powder, and crushed red pepper until smooth.
  4. Pour the dressing over the macaroni mixture and gently toss to coat everything evenly.
  5. Cover and refrigerate for at least one hour before serving to allow flavors to meld.
