  • ½ batch rough puff pastry or classic puff pastry (or store-bought)
  • 1 cup fig jam
  • ½ cup prepared caramelized onions, rough chopped
  • 4 ounces goat cheese
  • Fresh thyme sprigs

Instructions

  1. Preheat your oven to 400ºF and prepare a baking sheet lined with parchment paper.
  2. Roll out the puff pastry on a floured surface until about ⅛-inch thick. Cut out 16 circles using a 2-3/4-inch cutter.
  3. Dock each circle by making an indentation in the center. Brush with egg wash.
  4. Add caramelized onions to each tart's center.
  5. Chill for a few minutes while prepping goat cheese and fig jam.
  6. Bake the tarts for 12 minutes until puffed but not golden brown.
  7. Quickly add fig jam and goat cheese, then return to the oven for another 5-8 minutes until golden.
  8. Allow to cool slightly before garnishing with fresh thyme.
