  • 1 large bulb of garlic
  • 1.3 kg (2.8 lb) baking potatoes
  • 75 g (5 tbsp) butter
  • 2 tbsp heavy cream
  • 60 g (3/4 cup) freshly grated Parmesan cheese
  • 4 large egg yolks
  • Olive oil, salt, and pepper to taste

Instructions

  1. Roast the garlic by slicing off the tip of the bulb, drizzling with olive oil, wrapping in foil, and baking at 180°C (356°F) for 50-60 minutes until soft.
  2. Peel and dice the baking potatoes into chunks. Boil in salted water until fork-tender; drain and allow to steam dry.
  3. In a pot, mash the warm potatoes with butter, cream, roasted garlic, Parmesan cheese, salt, and pepper. Stir in egg yolks until well combined.
  4. Pipe the mixture onto a lined baking tray using a star-tipped piping bag to create swirls.
  5. Drizzle with melted butter and bake at 200°C (400°F) for 15-20 minutes until golden brown.
