  • 2½ tablespoons salted butter

  • Freshly cracked black pepper, to taste
  • 2 pounds yellow onion, halved and thinly sliced
  • 1½ tablespoons thyme, finely chopped
  • 6 cloves garlic, minced
  • ½ cup dry white grape juice
  • 2½ teaspoons dijon mustard
  • 2½ tablespoons all-purpose flour
  • 1 teaspoon worcestershire sauce
  • 1 large bay leaf
  • 2½ cups beef stock (low sodium)
  • 24 ounces gnocchi (store-bought)
  • 1½ cups gruyere cheese (freshly grated)
  • ½ cup parmesan cheese (freshly grated)

Instructions

  1. Caramelize the onions by cooking them in olive oil and butter over medium heat for 45-60 minutes until golden brown.
  2. Add thyme and garlic, cooking for 2 more minutes to enhance flavors.
  3. Deglaze the pan with grape juice, simmering until reduced by half.
  4. Stir in flour, then add dijon, Worcestershire sauce, and beef stock; bring to a boil and reduce to simmer for 6-7 minutes.
  5. Cook gnocchi in salted boiling water until they float (about 2 minutes), then drain.
  6. Combine gnocchi with the onion sauce and top with parmesan and gruyère cheese.
  7. Broil for 3-5 minutes until cheese is melted and bubbly.
