  • 1 teaspoon vanilla extract
  • ½ cup milk
  • ½ cup vegetable oil
  • ½ cup hot coffee
  • 2 cups shredded phyllo dough (kataifi)
  • 2 tablespoons butter
  • 1 cup pistachio cream
  • 4 oz milk or semi-sweet chocolate bar
  • ½ cup heavy cream

Instructions

  1. Preheat your oven to 350°F.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the egg, vanilla extract, milk, and vegetable oil; mix until smooth.
  4. Stir in the hot coffee until fully combined.
  5. Pour the batter into a greased baking pan and bake for about 25 minutes or until a toothpick comes out clean.
  6. Allow the cake to cool for about 10–15 minutes.
  7. Toast chopped kataifi with butter in a pan until golden brown.
  8. Mix toasted kataifi with pistachio cream and spread over cooled cake.
  9. For ganache, microwave chopped chocolate with heavy cream for about 45 seconds; let sit then whisk until smooth.
  10. Drizzle ganache over the cake and garnish as desired.
