  • 2 cups vegetable broth
  • 1.5 cups milk (whole or 2%)
  • 1 teaspoon Dijon mustard
  • 8 ounces sharp cheddar cheese, freshly grated
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the pasta according to package directions until al dente. In the last few minutes of cooking, add broccoli florets to blanch.
  2. Reserve about 1 cup of pasta water and drain the rest.
  3. In a skillet, melt butter and sauté onion until softened; add garlic and smoked paprika.
  4. Whisk in flour to form a roux; gradually add vegetable broth and milk until smooth.
  5. Simmer until thickened; stir in Dijon mustard and season with salt and pepper.
  6. Reduce heat and add cheddar cheese, stirring until melted.
  7. Combine cooked pasta and broccoli with the cheese sauce; adjust consistency if needed with reserved pasta water.
