  • 2/3 cup granulated sugar
  • 1/2 cup cornstarch
  • 1/4 tsp kosher salt
  • 3 1/2 cups whole milk (warm)
  • 6 large egg yolks (room temperature)
  • Seeds from 1 vanilla bean or 2 tsp vanilla bean paste
  • 4 tbsp unsalted butter (cold, cubed)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C) and line baking trays with parchment paper.
  2. Roll out puff pastry to about 9×9 inches and prick with a fork. Place on trays, cover with parchment, and weigh down.
  3. Bake for 35-45 minutes until golden brown. Cool completely.
  4. Trim edges to fit an 8×8-inch square pan.
  5. Whisk together sugar, cornstarch, and salt in a saucepan.
  6. Warm milk in another saucepan over medium heat.
  7. Gradually mix warm milk into egg mixture to temper eggs.
  8. Return mixture to heat and cook until thickened, stirring constantly.
  9. Stir in vanilla seeds and butter until melted.
  10. Layer one puff pastry sheet in the pan, pour custard over it, then top with another sheet.
  11. Cover tightly and refrigerate for at least four hours or overnight before serving.
