  • 810 mushrooms (sliced)
  • 2 garlic cloves (minced)
  • 150 g linguine
  • 1 cup cooking cream
  • 1/2 tsp crushed black pepper
  • 1/3 chicken stock cube
  • 1/2 tsp dried basil leaves
  • 1 cup baby spinach
  • 2 tbsp pine nuts
  • 1/4 cup Parmesan cheese (grated plus extra for topping)

Instructions

  1. Cook linguine according to package instructions until al dente.
  2. In a pan over medium-high heat, heat olive oil and sauté sliced mushrooms until golden brown. Add minced garlic and cook for another 2 minutes.
  3. Lower heat to medium-low; stir in cooking cream, crushed black pepper, chicken stock cube, and dried basil leaves. Simmer for 4-5 minutes until thickened.
  4. Add grated Parmesan cheese; stir until melted.
  5. Toss cooked linguine into the sauce until evenly coated.
  6. Fold in baby spinach and let it wilt from residual heat.
  7. Serve topped with toasted pine nuts and extra Parmesan.
