  • ½ cup granulated sugar (for the crust)

  • ¾ cup unsalted butter, melted
  • 16 oz (2 blocks) full-fat cream cheese, softened
  • ½ cup granulated sugar (for the filling)
  • 2 large eggs
  • 1 tablespoon lemon zest (about 1 lemon)
  • ¼ cup fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, combine graham cracker crumbs, all-purpose flour, sugar, and salt. Stir in melted butter until well mixed.
  3. Press two-thirds of the mixture firmly into the bottom of the baking dish for the crust.
  4. In another bowl, beat cream cheese until smooth. Gradually add sugar, then eggs one at a time. Mix in lemon zest and juice until creamy.
  5. Pour the filling over the crust and sprinkle the remaining crumb mixture on top.
  6. Bake for 30–35 minutes until set but slightly jiggly in the center.
  7. Cool at room temperature for an hour, then refrigerate for at least three hours before slicing.
