  • 1 cup fresh cranberries (or frozen)
  • 2 medium apples (Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C). Bake washed sweet potatoes on a parchment-lined baking sheet until tender, about 45 minutes.
  2. Allow sweet potatoes to cool slightly, then cut in half lengthwise and scoop out most of the flesh into a bowl.
  3. Mix the sweet potato flesh with cranberries, chopped apples, brown sugar, cinnamon, butter, and salt until well combined.
  4. Spoon the filling back into the sweet potato skins and return to the oven at 350°F (175°C) for an additional 15 minutes.
