  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, heat olive oil. Sauté onion and bell pepper until soft (3-4 minutes).
  3. Stir in spinach and cook until wilted (about 2-3 minutes). Season with garlic powder, salt, and pepper.
  4. In a bowl, whisk together eggs, milk, cottage cheese, Italian seasoning, salt, and pepper until smooth.
  5. Fold in the sautéed vegetables and shredded cheese into the egg mixture.
  6. Grease a 9-inch pie dish and pour in the mixture evenly.
  7. Bake for 40–45 minutes until golden brown and set in the center.
  8. Allow to cool for 5–10 minutes before slicing.
