  • 1 onion (diced)
  • 1 tablespoon fresh ginger (minced)
  • 4 garlic cloves (minced)
  • 1 red chili (minced)
  • 2 cans (14 ounces) coconut milk
  • 2 to 3 tablespoons soy sauce
  • 3 tablespoons red curry paste
  • 1 tablespoon brown sugar
  • 1.5 pounds chicken breast (sliced)
  • Salt and pepper to taste
  • Fresh lime juice, cilantro, chili oil or crunch, and scallions for garnish
  • Steamed rice for serving

Instructions

  1. Sauté aromatics: Heat oil in a large skillet over medium heat. Add diced onion and cook until softened (4-5 minutes). Stir in ginger, chili, and garlic; cook for another 2 minutes.
  2. Add coconut milk: Pour in coconut milk, brown sugar, soy sauce, salt, pepper, and red curry paste. Stir until well combined.
  3. Poach the chicken: Add sliced chicken to the simmering mixture. Reduce heat to medium-low and cook gently for about 15-20 minutes until fully cooked through.
  4. Serve: Stir in fresh lime juice before serving. Ladle chicken and sauce over steamed rice and top with cilantro, scallions, and chili oil or crunch.
