  • 2 tbsp unsalted butter
  • 1/2 cup melted unsalted brown butter
  • 1/4 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tbsp pure vanilla extract
  • 1 1/2 cups cake flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp kosher salt
  • 2 tbsp apple cider reduction
  • 2 tsp cornstarch
  • 2 tsp water
  • 4 oz cream cheese, at room temperature
  • 3 1/2 cups powdered sugar
  • 2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • Apple slices
  • Cinnamon sticks

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Dice apples and toss them with light brown sugar and cinnamon in a bowl.
  3. In a saucepan, melt unsalted butter; add apple mixture and cook for 5-7 minutes until softened.
  4. In a large bowl, combine melted brown butter and both sugars; mix well.
  5. Add eggs one at a time, followed by vanilla extract, mixing until smooth.
  6. Gently fold in dry ingredients: cake flour, baking powder, cinnamon, nutmeg, and salt until just combined.
  7. Fill each cupcake liner two-thirds full with batter; top with cooked apple mixture.
  8. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
