  • 1 cup granulated sugar
  • 1 teaspoon vanilla
  • 1 large egg (room temperature)
  • 1¼ cups all-purpose flour
  • ⅓ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1½ cups powdered icing sugar
  • ½ cup unsalted butter (room temperature)
  • 1 tablespoon milk
  • ½1 teaspoon mint extract (depending on your tastes)
  • green food coloring (optional)
  • ¾ cup semisweet chocolate chips
  • 1 tablespoon oil

Instructions

  1. Prepare the Cookie Dough: Cream together room-temperature butter and granulated sugar until fluffy. Mix in the egg and vanilla until combined.
  2. Combine Dry Ingredients: In another bowl, whisk flour, cocoa powder, baking soda, and salt. Gradually add to the wet mixture until just combined.
  3. Bake: Preheat oven to 350°F (175°C). Scoop dough onto parchment-lined baking sheets and bake for about 10 minutes until soft in the center. Cool on wire racks.
  4. Make Mint Frosting: Beat powdered icing sugar, softened butter, milk, mint extract, and optional food coloring until smooth.
  5. Assemble: Once cooled completely, spread or pipe frosting onto each cookie.
  6. Prepare Ganache: Melt semisweet chocolate with oil and drizzle over frosted cookies.
