  • 4 cups shredded cooked chicken
  • 2 cups instant rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup frozen diced onion and bell pepper blend
  • 1 can (10 oz) diced tomatoes with chilies, undrained
  • 1.5 cups chicken broth
  • 1 packet (1.12 oz) fajita seasoning
  • 8 oz shredded Mexican blend cheese

Instructions

  1. Preheat your oven to 350°F.
  2. In a large bowl, mix the shredded chicken, uncooked rice, cream of chicken soup, sour cream, onion and bell pepper blend, undrained tomatoes, chicken broth, fajita seasoning, and half of the cheese until well blended.
  3. Pour the mixture into a prepared baking dish and cover tightly with aluminum foil.
  4. Bake for 35 to 45 minutes until the rice is tender.
  5. Remove from the oven, top with remaining cheese, and return to bake until melted.
