  • 1 cup cold unsalted butter
  • 2/3 cup pumpkin puree (room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar (packed)
  • 2 large egg yolks (room temperature)
  • 2 teaspoons vanilla extract
  • 1 2/3 cups + 1 tablespoon all-purpose flour
  • 2 1/2 teaspoons pumpkin spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (180°C) and line two baking trays with parchment paper.
  2. In a stainless steel pan, brown the cold unsalted butter until it’s nutty in aroma and has brown bits at the bottom. Let it cool in the fridge until about 75°F.
  3. Spread the pumpkin puree on a plate and pat it dry with paper towels to remove excess moisture.
  4. Whisk together cooled butter and both sugars until they resemble pale wet sand.
  5. Add egg yolks, vanilla extract, and prepared pumpkin puree, mixing well.
  6. Fold in flour, pumpkin spice, baking soda, sea salt, and chocolate chips until just combined.
  7. Using a cookie scoop, shape dough into balls and place them on baking trays spaced apart.
  8. Bake one tray at a time for 9-13 minutes or until edges are golden but centers are slightly underbaked.
  9. Allow cookies to cool on a wire rack before enjoying.
