  • ½ cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ½ teaspoon sea salt
  • 1 ½ cups sweetened coconut flakes

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a stand mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the vanilla and coconut extracts along with the eggs; mix until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, cream of tartar, and sea salt.
  4. Gradually incorporate the dry ingredients into the wet mixture while mixing on low speed.
  5. Gently fold in most of the coconut flakes (reserve some for topping).
  6. Scoop dough onto prepared baking sheets about 2 inches apart and sprinkle reserved coconut on top.
  7. Bake for 9-10 minutes until cookies are lightly golden brown. Allow cooling on a rack.
