  • 34 large straight carrots (about 2 cups of ribbons)
  • 1 Tbsp ghee or butter
  • 1/2 tsp fresh rosemary, minced
  • 1/2 tsp fresh parsley, minced
  • 1/4 tsp salt

Instructions

  1. Wash the carrots thoroughly. Use a vegetable peeler to create long ribbons by peeling along the length of each carrot. Continue until you have about 2 heaping cups of ribbons.
  2. Fill a saucepan with an inch of water and bring it to a boil. Place the carrot ribbons in a steamer basket over the boiling water, cover, and steam for 3 minutes until crisp-tender.
  3. In a small bowl, combine ghee or butter with minced rosemary, parsley, and salt. Once the carrots are ready, gently toss them in the herb mixture until well coated. Serve immediately.
