  • 1 1/2 pounds peeled (seeded, and small cubed butternut squash)
  • 2 gala apples (peeled, cored and diced)
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla
  • 2 tablespoons brown sugar (or honey)
  • 2 tablespoons butter (chopped into sections)
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup raisins
  • 1/4 cup pecans (or walnuts)
  • 1/4 cup dried cranberries

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine butternut squash cubes, diced apples, cinnamon, vanilla extract, and brown sugar. Mix well.
  3. Season with salt and black pepper; stir to combine.
  4. Pour the mixture into a baking dish and spread it evenly.
  5. Scatter chopped butter on top, cover the dish with a lid or foil, and bake for 15 minutes.
  6. Remove from the oven, stir in raisins, cranberries, and nuts. Cover again and return to bake for another 15 minutes until tender.
