  • 134g salted butter
  • 125g brown sugar
  • 40g granulated sugar
  • 1 egg
  • 190g all-purpose flour
  • 120g semi-sweet chocolate chips
  • 300g pistachio cream
  • 300g kataifi (shredded phyllo dough)
  • 475ml heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8” baking pan with greased parchment paper.
  2. Brown the butter in a saucepan over medium-high heat until golden, then let it cool slightly in a bowl.
  3. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  4. Combine brown butter with sugars; whisk in the egg until smooth. Add heavy cream and vanilla extract.
  5. Fold in dry ingredients followed by chocolate chips.
  6. Spread dough in the prepared pan and bake for 22-27 minutes until golden on top.
  7. Toast kataifi in melted butter until golden brown; mix with pistachio cream.
  8. Prepare ganache by heating heavy cream and mixing it with chocolate chips until smooth.
  9. Layer pistachio mixture over cooled cookie base, pour ganache on top, and chill for at least one hour before slicing.
